The State Of Hockey


Okay so I cannot say I have been a hockey fan all my life, but this past year I have developed quite the obsession.

Because of the NHL lockout (cue the boo’s) the Wild's season has been cut short, less games, less ice time, and……. Less Zach Parise (cue the sad face L ) But Minnesota is back and ready to play some hockey, and Wednesday night just proved how PUMPED the fans are to get back in the swing of things.
The MN wild held an intra-squad scrimmage Wednesday nights for eager fans to get a glimpse before the (shortened) season. Hey, Free tix?! I’m in!

Now that I’m a (beginner) player, I have gained SO much more appreciation for the sport, and the emotional attachment that comes with it. Not the gooey, sappy attachment, but the pride element, the thrill of winning, and the development of skills as you push yourself as hard as you can.

But seriously, a year ago I would have never thought I would be playing hockey….(see below)
I’ve also had the opportunity to help out with a U10 girls team, which is such an amazingly fun volunteering gig. Watching them improve and work hard to win, push themselves, and support their teammates while they all learn the game, is such a great experience. They will all grow into amazing players, and I cannot wait to see them all kick butt in high school.

So after waiting 1.5 hours in line for half off apparel at the mall, sitting 4 rows behind the net (hey there Backstrom), and even getting on the beloved FAN CAM, I finally got my hockey fix.


So thanks to all of you out there who got me into hockey, keep me motivated to continue learning the sport, and who let me cheer you on while you play!

Take a day off!



No, I don’t mean run errands, meet someone at the mall, babysit for only half a day, literally 
                                                   TAKE A DAY OFF!

For me, this isn’t easy, I love to be on the go, getting things done, crossing things off my to do list, but once in a while, when we get the opportunity (the rare opprotunity) we need to spend a day doing something simply because we want to. Watch a series on Netflix, read all day at the nearest caribou, order food and lay on your couch, go get a pedicure. Whatever helps you relax and gives you time for yourself.

Its rare, but its heaven.

The only chance I actually get to do this is school breaks. Semesters are too busy with papers, readings, exams, quizzes, and summers are just as busy with work and activities, the only chance I get is J-term and what a marvelous thing J-term is

So do it for yourself once and a while, go to caribou, bring a good book, and read as long as you want, then go home, order a pizza and take your pick off Netflix for a marathon through the night.
        (GF side-note: Pizza Luce are my faves for GF pizza delivery)

No I don’t recommend doing this too often, we don’t want to get lazy folks, but nursing school is stressful, work is tough, life is stressful, so once in a while, take a day off.

Gluten-free Peanut Butter Blossoms


Ingredients:

3/4
cup granulated sugar
1/2
cup packed brown sugar
1/2
cup peanut butter
1/4
cup shortening
1/4
cup butter, softened
1
egg
1 1/2
cups Bisquick® Gluten Free mix

Hershey's® Kisses® Brand milk chocolates, unwrapped
  • 1In large bowl, mix 1/2 cup of the granulated sugar, the brown sugar, peanut butter, shortening, butter and egg. Stir in Bisquick mix. Cover; refrigerate 1 hour or until firm.
  • 2Heat oven to 375°F. In small bowl, place remaining 1/4 cup granulated sugar. Shape dough into 1-inch balls; roll in granulated sugar. On ungreased cookie sheets, place balls 2 inches apart.
  • 3Bake 8 to 10 minutes or until light golden brown. Immediately top each cookie with 1 milk chocolate candy, pressing down firmly so cookie cracks around edge. Remove from cookie sheets to cooling racks.

An introduction

 So I am completely new to this blogging thing, but here I go! 
i though i would start out with a couple things about me

1. I am 2nd year nursing student. 4 Year BSN-RN in the making! School takes up the majority of my free time and nursing is not a piece of cake!
2. I  am 100% gluten-free. A HUGE part of my life in the past year but my diagnosis has changed my life.
3.  I am Christian. Nuff said, I live my life for God and try to do good in the things that I do.

4. I love to bake! So for those of you who are GF out there I will try and post my favorite recipes! 
5. I love hockey, so if i keep posting about hockey and more hockey, and more hockey, what can I say, i'm a Minnesota girl!
